As I was eating several pcs of it, I was imagining all the possibilities of this loaf. AND I used only 1/2 the xanthan, next time I might omit it completely to see how it goes. Either way, this was a great recipe. I love how it doesn't contain potato or tapioca starch. Its golden in colour with a very savoury chickpea taste. Its often the flour used for making onion barjies. It makes fab sweetcorn fritters or pancakes too.
